Electrolux surveys Americans and how they use their kitchensSweden-based Electrolux, one of largest manufacturer of European-style appliances and a featured vendor at Fine Lines stores, recently commissioned a national study to learn just how Americans are using their kitchens, and more important, how Americans feel about their kitchens.

The kitchen ain’t just for cooking anymore…

Nearly nine in 10 Americans (86%) are involved in some sort of activity in their kitchen besides cooking such as paying bills, doing work or homework, doing a hobby or craft, reading or playing a game.

More than two thirds of adults (67%) say they use their kitchen to socialize and entertain guests.

One-third of adults spend three to four hours in their kitchen during a typical day, while nearly 20% say they spend five hours or more a day.

My kitchen, my castle…

More than half of Americans (58%) say the kitchen is one of their favorite rooms in their home.

Nearly seven in 10 Americans (69%) agree that they really enjoy spending time in their kitchen.

More than two third of Americans (68%) would rather have a kitchen where they can socialize and spend quality time than a kitchen that is just used for cooking meals.

Nearly half of adults (46%) agree that the kitchen is the center of activity in the household.

When Americans were read a list of words and asked which phrases describe what they would like their kitchen to be, nearly nine in 10 said “comfortable” (88%) and “practical” (88%).

One in two (47%), or approximately 104 million adults, say they want a state-of-the-art kitchen.

Nearly nine in 10 of adults (88%) agree that they want the kitchen to be a comfortable place that reflects on their household’s lifestyle.

More than half of Americans (57%) agree that their kitchen should be a reflection of their personal styles and tastes.

Snow Days Are for Bread Baking

My friends up and down the east coast have all reported more snow than they could remember. My old neighborhood in Virginia posted 40-inches in two days.

I do remember a particularly big snow storm that kept us all in the house for three days. Kind neighbors hung bags of eggs at the end of the ¼ mile driveway. Another friend delivered milk to the back of the property, but to get it, I had to struggle across a field knee deep in snow. At last, the snow plow arrived. No, not affixed to a pickup truck, rather on the front of a tractor driven be a fearless female farmer. We heard her long before we saw her. I was never so grateful to get in my car and make a run to the store.

As the kids take advantage of snow days, outside on makeshift sleds, cooks take to the kitchen. There is no better time to bake bread, no rush … you can't go anywhere anyway!

Thermador's Rustic Italian BreadRustic Italian Bread by Thermador

Makes 1 large loaf

This recipe requires a bit of patience—the sponge, which gives the bread flavor, must be made 11 to 27 hours before the dough is made. We find it makes the most sense to prepare the sponge (which requires just 5 minutes of hands-on work) the day before you want to bake the bread. On the second day, remove the sponge from the refrigerator and begin step 2 at least 7 hours before you want to serve the bread. If you own two standing mixer bowls, in step 1 you can refrigerate the sponge in the bowl in which it was made. Use the second bowl to make the dough in step 2. Have ready a spray bottle filled with water for misting the loaves.

Ingredients

Sponge
2 cups (11 ounces) bread flour
1/4 teaspoon instant yeast
1cup water, at room temperature

Dough
3 cups (16 1/2 ounces) bread flour, plus more for dusting the work surface and hands
1 teaspoon instant yeast
1 1/3 cups water, at room temperature
2 teaspoons salt

1. For the sponge: Combine the flour, yeast, and water in the bowl of a standing mixer fitted with the dough hook. Knead at the lowest speed until the ingredients form a shaggy dough, 2 to 3 minutes. Transfer the sponge to a medium bowl, cover tightly with plastic wrap, and let stand at room temperature until it begins to bubble and rise, about 3 hours. Refrigerate the sponge at least 8 hours or up to 24 hours.

2. For the dough: Remove the sponge from the refrigerator and let stand at room temperature while making the dough. Combine the flour, yeast, and water in the bowl of a standing mixer fitted with the dough hook; knead at the lowest speed until a rough dough is formed, about 3 -minutes. Turn the mixer off and, without removing the dough hook or bowl from the mixer, cover the bowl loosely with plastic wrap; let the dough rest 20 minutes.

3. Remove the plastic wrap, add the sponge and salt to the bowl, and continue to knead at the lowest speed until the ingredients are incorporated and the dough is formed (the dough should clear the sides of the bowl but stick to the bottom), about 4 minutes. Increase the mixer speed to medium low and continue to knead until the dough forms a more cohesive ball, about 1 minute. Transfer the dough to a large lightly oiled bowl (at least 3 times the dough’s size) and cover tightly with plastic wrap. Let the dough rise in a cool, draft-free spot until slightly risen and puffy, about 1 hour.

4. Remove the plastic wrap and leaving dough in the bowl, slide a plastic bench scraper under one side of the dough, gently lifting and folding one third of the dough toward the center. Repeat with opposite side of the dough, and, finally, fold the dough in half, perpendicular to the first folds (so that it resembles a rough square). Replace the plastic wrap; let the dough rise 1 hour. Turn the dough again, replace the plastic wrap, and let the dough rise 1 hour longer.

5. To shape the dough: Dust a work surface liberally with flour. Gently scrape the dough from the bowl and invert onto the work surface (the side of dough that was against the bowl should now be facing up). Dust the dough and your hands liberally with flour and, using minimal pressure, push the dough into a rough 8- to 10-inch square. After delicately pushing the dough into an 8- to 10-inch square, fold the top left corner diagonally to the middle. Repeat this with the top right corner, and begin to gently roll the dough from top to bottom, continuing to roll until the dough forms a rough log. Roll the dough onto its seam and, sliding your hands under each end, transfer the dough to a sheet of parchment paper. Gently shape the dough into a 16-inch football shape by tucking the bottom edges underneath. Dust the loaf liberally with flour and cover loosely with plastic wrap; let the loaf rise until doubled in size, about 1 hour. Meanwhile, adjust an oven rack to the lower-middle position, place a baking stone on the rack, and heat the oven to 500 degrees.

6. To bake: Using a single-edge razor blade or sharp chef’s knife, cut a slit 1/2 inch deep lengthwise along the top of the loaf, starting and stopping about 1 1/2 inches from the ends; spray the loaf lightly with water. Slide the parchment sheet with the loaf onto a peel or inverted rimmed baking sheet, then slide the parchment with the loaf onto the hot baking stone in the oven. Bake 10 minutes, then reduce the oven temperature to 400 degrees and quickly rotate the loaf from front to back using the edges of the parchment; continue to bake until deep golden brown and an instant-read thermometer inserted into the center of the loaf reads 210 degrees, about 35 minutes longer. Transfer to a wire rack, discard the parchment, and cool the loaf to room temperature, about 2 hours.

Easy Green Party Food for Sunday's Championship Game

We’ve all had a week to celebrate the Colts win over the Ravens last Saturday, and now it’s time to get ready for Sunday’s AFC Championship game against the New York Jets. 

According to Peyton Manning, preparation is key. “I don't know if anything feels different,” Manning said Wednesday afternoon as the AFC South Champion Colts (15-2) prepared to play the Wild Card New York Jets (11-7) in the AFC Championship Game at Lucas Oil Stadium in downtown Indianapolis Sunday at 3 p.m.
 
“It's an exciting week. I think the focus sitting here on Wednesday is we have to have a good week of preparation.”

Food that is filling, easy to eat and familiar can also be healthy while practicing greener cooking methods. Last week I offered a homemade hummus with fresh vegetables and vegetarian lasagna, the first is no-cook finger food and the second uses fresh vegetables and does not require a knife, practical choices when food moves from the table to the sofa. 
 
This week, I suggest a simple platter of skewered tortellini with a marinara dipping sauce. Remember to turn the boiling water off and let the residual heat finish cooking the pasta. Better to be on the firm side for this dish, so cut a few minutes off the cooking time recommended on the package to prevent the filling from leaking out or from being to soft to stay on the skewer. Rinse with cold water. Thread two or three tortellinis on a short skewer. Serve at room temperature with an organic marinara sauce. Garnish the platter with plenty of fresh basil. And of course, no party would be complete without a dessert.

Makes 1 quart

Leslie’s note: This recipe comes from Cook’s Country, one of my favorite cooking magazines along with Cook’s Illustrated. A departure from its formula of improving upon traditional favorites, this recipe cuts the work of making ice cream and eliminates the ice cream maker. Use local dairy products for the greenest version. Total prep time: 10 minutes. 

Choose organic chocolateIngredients
1 teaspoon instant coffee or espresso powder
1 tablespoon hot water
4 ounces bittersweet chocolate, chopped fine (look for an organic brand like Green & Black’s)
½ cup sweetened condensed milk
½ teaspoon vanilla extract
Pinch salt
1 ¼ cups cold heavy cream

Directions
1. Combine coffee powder and hot water in a small bowl. Let stand until coffee dissolves, about 5 minutes. Microwave chocolate, sweetened condensed milk, and coffee mixture in a bowl, stirring every 10 seconds, until chocolate is melted, about 1 minute. Stir in vanilla and salt. Let cool.
2. With an electric mixer on medium-high speed, whip cream to soft peaks, about 2 minutes. Whisk one-third of whipped cream into chocolate mixture to lighten it up. Fold remaining whipped cream into chocolate mixture until incorporated. Freeze in airtight container until firm, at least 6 hours. If you make this several days ahead, place a piece of plastic wrap directly on the surface before freezing.

Celebrating Copenhagen: Electrolux at the UN Climate Change Convention

Electrolux has been an outspoken force for CO2 emission control, a hot topic at the United Nation's conference on climate control in Copenhagen this week. Calling for a government incentives for consumers to replace their older, less efficient appliances, Electrolux posted a handy app to calculate the energy savings by European country and city for replacing household appliances. We hope Electrolux adapts it for the U.S.

Copenhagen is a beautiful city, one I hope to return to soon for another visit. Tivoli Gardens, shopping along the walking streets with irresistible signs advertising 'Salg' and one of the most memorable meals I've ever experienced. Dad and I wandered up the stairs of charmingly nondescript building with a menu perched in the front window. It claimed the chef went to the market each day to choose the freshest ingredients for the evening's seven course meal. No choices. We returned that night for dinner. We were not disappointed.

Get a taste of Copenhagen for your next party with these Blue Cheese Gougeres, using Danish blue cheese, a less expensive alternative to Roquefort. This easy hors d'oeuvre is perfect for holiday entertaining.

Danish Blue Cheese GougeresDanish Blue Cheese Gougeres
Makes about 24
 
Ingredients
1/4 cup dry white wine
1/4 cup water
1/4 cup (1/2 stick) unsalted butter, cubed
3/4 teaspoon freshly ground pepper
1/4 teaspoon salt
2/3 cup all purpose flour
3 large eggs, room temperature
1/3 cup finely crumbled Danish blue cheese
 
Preparation
Preheat oven to 375°F. Line large rimmed baking sheet with parchment. Combine first 5 ingredients in heavy medium saucepan. Bring to boil over medium heat, stirring until butter is melted. Stir in flour; reduce heat to medium-low. Stir vigorously until mixture forms large dough clumps and film forms on bottom of saucepan, about 1 minute. Remove from heat; cool 5 minutes.
 
Meanwhile, whisk eggs in medium bowl. Transfer 1 tablespoon beaten egg to small bowl and reserve. Add 1/3 of remaining beaten eggs to dough in saucepan; whisk until well incorporated. Add remaining eggs in 2 additions, stirring until eggs are completely absorbed after each addition (dough will be sticky). Mix in blue cheese.
 
Drop dough by teaspoonfuls onto baking sheet, forming about 24 walnut-size mounds and spacing about 1 inch apart. Using pastry brush, brush each mound with reserved egg, flattening any pointed tops.
 
Bake gougères until puffed, golden brown, and dry, about 30 minutes. Do AHEAD: Can be made up to 1 week ahead. Cool completely. Place in airtight containers and store in freezer. Rewarm on baking sheet in 350°F oven until heated through, about 5 minutes. Serve warm.

Wednesday Cooking: Simple Cake for Holiday Entertaining from Thermador

Holidays are here and the party season has begun. Whether you’re asked to bring a dessert for a party or are entertaining at home, Thermador’s recipe for Devil’s Food Cake with a coffee cream frosting will prove irresistible. This is an easier recipe than most because eggs are added at once rather than separating them and making a meringue that’s folded into the batter. If you’d like to make this cake ahead, bake and cool the layers, wrap carefully in plastic wrap and freeze. On the day of the party, remove the cake and frost while still frozen to avoid any dark crumbs in the light frosting.

This cake's texture is both soft and dense, similar to chocolate pound cake, only softer and lighter. Its flavor is intensely chocolate, yet pleasantly sweet. The substantial coffee-flavored buttercream stands up to the cake's dense texture and balances the rich chocolate flavor.
 
 
Ingredients:
 
Velvet Devil's Food Cake
1/2 cup natural cocoa powder 
2 teaspoons instant espresso powder , or instant coffee
1 cup boiling water 
2 teaspoons vanilla extract 
12 tablespoons unsalted butter (1 1/2 sticks), softened
1 1/4 cups granulated sugar 
2 large eggs , at room temperature
1 1/4 cups unbleached all-purpose flour 
1/2 teaspoon baking soda 
1/2 teaspoon table salt 
 
Coffee Buttercream Frosting
1 tablespoon instant espresso powder , or instant coffee
1 tablespoon coffee liqueur 
1 tablespoon vanilla extract 
1/2 pound unsalted butter (2 sticks), softened
2 cups confectioners' sugar 
1 egg yolk (beaten) , or 2 tablespoons beaten egg
 
1. For the Cake: Adjust oven rack to center position and heat oven to 350 degrees. Grease two 8-by-1 1/2-inch round baking pans with shortening. Line pan bottoms with waxed or parchment paper; grease paper as well. Dust pans with flour; tap out excess.
 
2. Mix cocoa and instant coffee in small bowl; add boiling water and mix until smooth. Cool to room temperature, then stir in vanilla.
 
3. Beat butter in bowl of electric mixer set at medium-high speed until smooth and shiny, about 30 seconds. Gradually sprinkle in sugar; beat until mixture is fluffy and almost white, 3 to 5 minutes. Add eggs one at a time, beating 1 full minute after each addition.
 
4. Whisk flour, baking soda and salt in medium bowl. With mixer on lowest speed, add about 1/3 of dry ingredients to batter, followed immediately by about 1/3 of cocoa mixture; mix until ingredients are almost incorporated into batter. Repeat process twice more. When batter appears blended, stop mixer and scrape bowl sides with rubber spatula. Return mixer to low speed; beat until batter looks satiny, about 15 seconds longer.
 
5. Divide batter evenly between pans. With rubber spatula, run batter to pan sides and smooth top. Bake cakes until they feel firm in center when lightly presesd anad skewer comes out clean or with just a crumb or two adhering, 23 to 30 minutes. Tranfer pans to wire racks; cool for 20 minutes. Run knife around perimeter of each pan, invert cakes onto racks, and peel off paper liners. Reinvert cakes onto additional racks; cool completely before frosting.
 
6. For the Buttercream Frosting: Mix instant coffee, coffee liqueur, and vanilla in small cup until coffee dissolves; set aside. Beat butter in bowl of electric mixer at medium-high speed until fluffy, about 1 minute. Add sugar and beat 3 minutes longer. Add coffee mixture and egg to frosting; beat until frosting mounds around beaters in a fluffy mass, 3 to 5 minutes longer. Apply frosting onto first cake layer and spread with a long metal spatula, top with second cake layer, top second layer with frosting, spread and then frost sides.

Last Minute Thanksgiving Dessert

Thermador's easy and delicious pumpkin cheesecake
For those who have not finalized their Thanksgiving menu, or are the guest with the dessert assignment, try this delicious Pumpkin Cheesecake from Thermador. It's a little twist on tradition without going too far, not much more than adding cream cheese to pumpkin pie filling and substituting a graham cracker crust for pastry. Pumpkin Cheesecake
MAKES ONE 9-INCH CAKE, SERVING 12 TO 16

Depending on the oven and the temperature of the ingredients, the cheesecake may bake about 15 minutes faster or slower than the instructions indicate; it is therefore best to check the cake 11/4 hours into baking. To make slicing the cheesecake easy and neat, use a knife with a narrow blade, such as a carving knife; between cuts, dip the blade into a pitcher of hot water and wipe it clean with paper towels. The cheesecake is good on its own, but the Brown Sugar and Bourbon Cream (recipe follows) is a grand addition.

Crust
5 ounces graham crackers (9 whole crackers),
broken into large pieces
3 tablespoons sugar
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
6 tablespoons unsalted butter, melted

Filling
11/3 cups (101/3 ounces) sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/2 teaspoon salt
1 can (15 ounces) pumpkin
11/2 pounds cream cheese, cut into 1-inch chunks
and left to soften at room temperature,
about 30 minutes
1 tablespoon vanilla extract
1 tablespoon juice from 1 lemon
5 large eggs, left at room temperature, about
30 minutes
1 cup heavy cream

1. For the crust: Adjust oven rack to lower-middle position and heat oven to 325 degrees. Spray bottom and sides of 9-inch springform pan evenly with nonstick cooking spray. Pulse crackers, sugar, and spices in food processor until evenly and finely ground, about fifteen 2-second pulses. Transfer crumbs to medium bowl, drizzle melted butter over, and mix with rubber spatula until evenly moistened. Turn crumbs into prepared springform pan and, using hand, spread crumbs into even layer. Using flat-bottomed ramekin or drinking glass, press crumbs evenly into pan bottom, then use soup spoon to press and smooth crumbs into edges of pan. Bake until fragrant and browned about the edges, about 15 minutes. Cool on wire rack while making filling.

2. For the filling: Bring about 4 quarts water to simmer in stockpot. Whisk sugar, spices, and salt in small bowl; set aside.

3. In standing mixer fitted with flat beater, beat cream cheese at medium speed to break up and soften slightly, about 1 minute. Scrape beater and bottom and sides of bowl well with rubber spatula. Add about one third of sugar mixture and beat at medium-low speed until combined, about 1 minute; scrape bowl and add remaining sugar in two additions, scraping bowl after each addition. Add pumpkin, vanilla, and lemon juice and beat at medium speed until combined, about 45 seconds; scrape bowl. Add 3 eggs and beat at medium-low until incorporated, about 1 minute; scrape bowl. Add remaining 2 eggs and beat at medium-low until incorporated, about 45 seconds; scrape bowl. Add heavy cream and beat at low speed until combined, about 45 seconds. Using rubber spatula, scrape bottom and sides of bowl and give final stir by hand.

4. Set springform pan with cooled crust on 18-inch-square doubled layer heavy-duty foil and wrap bottom and sides with foil; set wrapped pan in roasting pan. Pour filling into springform pan and smooth surface; set roasting pan in oven and pour enough boiling water to come about halfway up side of springform pan. Bake until center of cake is slightly wobbly when pan is shaken and center of cake registers 145 to 150 degrees on instant-read thermometer, about 11/2 hours (see note). Run paring knife around cake to loosen; remove sides of pan. Set roasting pan on wire rack and cool until water is just warm, about 45 minutes. Remove springform pan from water bath, discard foil, and set on wire rack; continue to cool until barely warm, about 3 hours. Wrap with plastic wrap and refrigerate until chilled, at least 4 hours, preferably overnight.

5. To serve: Slide thin metal spatula between crust and pan bottom to loosen, then slide cake onto serving platter. Let cheesecake stand at room temperature about 30 minutes, then cut into wedges and serve.

Lean and Green TV Dinners

The California Energy Commission voted unanimously today to create the nation's first mandatory energy requirements for all TVs sold in the state. The new regulations will take effect in 2011 and require all TVs to be about 33 percent more energy efficient than current models, that figure ramps up to 50 percent in 2013. Unlike the federal government's Energy Star program, the CA program is mandatory.

Under pressure from some retailers, the commission scaled back its original proposal and exempted the very biggest TV screens, those larger than 58 inches in diagonal. But those mega-sized screens account for no more than 2 percent of all televisions sold, the commission says.

Whether large screen or small, families enjoy a break from the table to gather round the TV to watch a big game, especially with Thanksgiving weekend coming up. Here's a recipe from Chow that's portable, healthy and most important, not messy. Enjoy!

2 pounds lean ground beef
2 large eggs, lightly beaten
1/4 cup unseasoned dry breadcrumbs
2 teaspoons plus 1 tablespoon Worcestershire sauce
2 teaspoons kosher salt
1/2 teaspoon ground mustard
1/4 teaspoon freshly ground black pepper
5 tablespoons unsalted butter
8 ounces cremini mushrooms, cleaned, stems trimmed, and quartered (about 2 1/2 cups)
2 medium shallots, minced
1/4 cup all-purpose flour
1/2 cup dry red wine
1 (14-ounce) can low-sodium beef broth

INSTRUCTIONS
Heat the oven to 350°F and arrange the rack in the middle. Combine ground beef, eggs, breadcrumbs, 2 teaspoons of the Worcestershire sauce, salt, mustard, and pepper in a large bowl and mix well. Shape into 8 (3-1/2-by-2-1/2-by-1-inch) oval patties and set aside.

Heat a large frying pan over medium heat and melt 1 tablespoon of the butter. When it foams, add 4 patties and brown, about 3 to 4 minutes per side. Transfer patties to a 13-by-9-inch baking dish. Brown remaining 4 patties, and transfer to the baking dish. Drain all fat from the pan but leave any browned bits.

Return the pan to medium heat and melt remaining 4 tablespoons butter. Add mushrooms and shallots and season with salt and freshly ground black pepper. Cook, stirring rarely, until mushrooms are slightly browned and soft, about 4 minutes.

Sprinkle flour over mixture and stir until fully incorporated. Cook, stirring occasionally, until flour is lightly toasted, about 3 minutes. Add red wine and stir, scraping up any browned bits from the bottom of the pan. Slowly pour in broth and stir until smooth. Let mixture come to a boil and cook until sauce is reduced by half, about 13 minutes.

Add remaining 1 tablespoon Worcestershire sauce. Taste and add salt and freshly ground black pepper as needed. Pour sauce over patties in the baking dish and cover with aluminum foil. Bake for 20 minutes or until meat is tender and slightly pink in the middle.

Add mashed potatoes, carrot sticks and celery and a big cookie. You're all set.

Start with a costume exchange instead of shopping for something new. Alternately, challenge the kids to come up with a costume made from elements in the house. Be careful, your treasured satin evening wrap may turn up as Cinderella’s ball gown.

Here’s a great recipe incorporating pumpkin seeds:

Pumpkin BrittlePumpkin Seed Brittle

•    1 cup sugar
•    1/2 cup water
•    1/8 teaspoon fine sea salt
•    3/4 cup raw green (hulled) pumpkin seeds (not toasted; 4 ounces)
•    Special equipment: parchment paper; a candy thermometer
 
Preparation
Put a 24- by 12-inch sheet of parchment on a work surface and anchor corners with pieces of tape. Bring sugar, water, and sea salt to a boil in a 2-quart heavy saucepan over moderate heat, stirring until sugar is dissolved. Cook mixture, without stirring, washing down any sugar crystals from side of pan with a pastry brush dipped in cold water, until syrup registers 238°F (soft-ball stage) on thermometer, 10 to 12 minutes (sugar syrup will be colorless). Remove from heat and stir in seeds with a wooden spoon, then continue stirring until syrup crystallizes, 3 to 4 minutes.

Return pan to moderate heat and cook, stirring constantly, until sugar melts completely (sugar will continue to dry and become grainy before melting) and turns a deep caramel color, 4 to 5 minutes more (seeds will be toasted). Carefully pour hot caramel mixture onto parchment and carefully cover with another sheet. Immediately roll out(between sheets of parchment) as thinly as possible with a rolling pin, pressing firmly. Remove top sheet of parchment and immediately cut brittle into pieces with a heavy knife or pizza wheel. Cool brittle completely, then peel paper from bottom. (Alternately, break brittle into pieces once cool.)

Brittle can be made 2 weeks ahead and kept, layers separated by wax paper, in an airtight container.
