Green Cooking: Best of the Season

Green cooks value locally grown, seasonal food, and with spring around the corner, asparagus season will soon make its way from south to north.

I remember the raised bed set aside for asparagus in my Maryland garden. When I moved in, it was the only green in the fenced vegetable garden, a plot I initially mistook for rampant weeds. Once spruced up with an edging of marigolds and removal of the actual weeds, that part of the garden was one of the first signs of spring as tiny asparagus shoots poked their way out of the ground. These slim shoots were tender enough to eat raw, and as a matter of fact, few actually made it to the dinner table.

Pan Roasted Asparagus by Thermador

Ingredients
Serves 3 to 4

This recipe works best with asparagus that is at least ½ inch thick near the base. If using thinner spears, reduce the covered cooking time to 3 minutes and the uncovered cooking time to 5 minutes. Do not use pencil-thin asparagus; it cannot withstand the heat and overcooks too easily.

1 tablespoon olive oil
1 tablespoon unsalted butter
2 pounds thick asparagus spears (see note), ends trimmed
Kosher salt and ground black pepper
1/2 lemon (optional)

1. Heat the oil and butter in a 12-inch skillet over medium-high heat. When the butter has melted, add half of the asparagus to the skillet with the tips pointed in one direction; add the remaining spears with the tips pointed in the opposite direction. Using tongs, distribute the spears in an even layer (the spears will not quite fit into a single layer); cover and cook until the asparagus is bright green and still crisp, about 5 minutes.

2. Uncover and increase the heat to high; season the asparagus with salt and pepper. Cook until the spears are tender and well browned along one side, 5 to 7 minutes, using the tongs to occasionally move the spears from the center of the pan to the edge of the pan to ensure all are browned. Transfer the asparagus to a serving dish, adjust the seasonings with salt and pepper, and, if desired, squeeze the lemon half over the spears. Serve immediately.


Electrolux Uses Robots for Energy Savings

Four new robots were recently installed at the Electrolux manufacturing plant in Dudley Park, South Australia, increasing production by 10 percent. The facility can now turn out 2000 high-gloss oven and grill cavities each day. Using robots to control powder coating gun movement, the automated process also saves energy and improves working conditions.

By replacing linear reciprocators with the six axis articulated robots, the system is flexible and allows different types of cavities to be processed at any time, which is critical as the site manufactures over 120 different oven models. The total investment in the powder coating facility will be returned through savings within two years.

Electrolux has been able to achieve substantial energy savings of up to 15 percent when compared to the old production line process. The automated powder coating solution not only saves energy by eliminating the need for the drying process. It also reduced water usage and is helping to increase productivity, achieve savings and improve the health & safety in the workplace.

Electrolux has set their goal to reduce factory emissions by 15 percent by the end of 2012.

According to Electrolux manufacturing engineer, Colin Thomas, “Installing ABB’s robotics equipment on the new coating process has been instrumental in our sustainability success and made a huge contribution to the site’s achievement in reaching its emission reduction goals for the year.”

More than the Turf Will Be Green at Super Bowl XLIV

With less than a week to go until the Super Bowl XLIV kick-off at Sun Life Stadium in Miami, the NFL has been working to ensure this is the greenest big game to date. 

Grass is greener

The natural grass field was installed the weekend of Jan. 10, following the Orange Bowl. Thirty 18-wheelers transported 92,000 square feet of sod last month grown on a farm in south Alabama for the last 18 months. Crews worked throughout the day yesterday to replace the end zones following Sunday's Pro Bowl game.

That's where "most of the work is," said NFL field director Ed Mangan. 

While Ed and his team prepared the field, community and private groups greened up the surrounding area. 

NFL environmental program expansion

As part of the NFL's environmental program expansion, the NFL has partnered with U.S. Forest Service and the Florida Division of Forestry to plant 2,700 trees at a dozen sites in Hillsborough and Pinellas counties to reduce greenhouse gas over time, long after the final score is posted.

The NFL program also includes the diversion of waste from local landfills through reuse and recycling. Leftover food from the Super Bowl will be collected and distributed to local soup kitchens, shelters and other local organizations that provide meals to those in need. Decorative materials, building materials and leftover office supplies will be recovered and donated to local organizations. 

For the third year, the event will be powered completely with renewable energy provided by EarthEra. The renewable energy credits (RECs) provided will be generated by wind and solar energy.

With Pro Bowl attendance recorded at 70,697, it will be no surprise if Sun Life Stadium fills to its capacity at 75,540. But for every fan lucky enough to have a seat, there will be many more fans watching from a distance on television.

"LED TVs allow you to drive power down significantly," said Scott Birnbaum, vice president LCD Business at Samsung. "The current generation of LED TVs offers an energy reduction of 40 percent with an overall improvement in picture quality." 

As LED backlights become more responsive, energy may be conserved through active dimming. Back lights are dimmed to produce darker scenes and lit accordingly as scenes brighten.

"Active dimming reduces power 15 to 25 percent, up to 90 percent depending on content," said Birnbaum.

The darker the scene, the better the TV's energy performance because the less energy is needed to light the image. Although the Saints were the first team in the NFL to wear all black uniforms, they won't be wearing them this Sunday, even if dark uniforms could save more than a few kilowatts of electricity. The Saints will wear black jerseys with gold pants when they meet the Indianapolis Colts in their home jersey blue this Sunday for Super Bowl XLIV.

Easy Green Party Food for Sunday's Championship Game

We’ve all had a week to celebrate the Colts win over the Ravens last Saturday, and now it’s time to get ready for Sunday’s AFC Championship game against the New York Jets. 

According to Peyton Manning, preparation is key. “I don't know if anything feels different,” Manning said Wednesday afternoon as the AFC South Champion Colts (15-2) prepared to play the Wild Card New York Jets (11-7) in the AFC Championship Game at Lucas Oil Stadium in downtown Indianapolis Sunday at 3 p.m.
 
“It's an exciting week. I think the focus sitting here on Wednesday is we have to have a good week of preparation.”

Food preparation is essential for game day if everyone is to enjoy the afternoon. A mid-afternoon game guarantees hungry viewers. Food that is filling, easy to eat and familiar can also be healthy while practicing greener cooking methods. Last week I offered a homemade hummus with fresh vegetables and vegetarian lasagna, the first is no-cook finger food and the second uses fresh vegetables and does not require a knife, practical choices when food moves from the table to the sofa. 
 
This week, I suggest a simple platter of skewered tortellini with a marinara dipping sauce. Remember to turn the boiling water off and let the residual heat finish cooking the pasta. Better to be on the firm side for this dish, so cut a few minutes off the cooking time recommended on the package to prevent the filling from leaking out or from being to soft to stay on the skewer. Rinse with cold water. Thread two or three tortellinis on a short skewer. Serve at room temperature with an organic marinara sauce. Garnish the platter with plenty of fresh basil. And of course, no party would be complete without a dessert.

Makes 1 quart

Leslie’s note: This recipe comes from Cook’s Country, one of my favorite cooking magazines along with Cook’s Illustrated. A departure from its formula of improving upon traditional favorites, this recipe cuts the work of making ice cream and eliminates the ice cream maker. Use local dairy products for the greenest version. Total prep time: 10 minutes. 

Choose organic chocolateIngredients
1 teaspoon instant coffee or espresso powder
1 tablespoon hot water
4 ounces bittersweet chocolate, chopped fine (look for an organic brand like Green & Black’s)
½ cup sweetened condensed milk
½ teaspoon vanilla extract
Pinch salt
1 ¼ cups cold heavy cream

Directions
1. Combine coffee powder and hot water in a small bowl. Let stand until coffee dissolves, about 5 minutes. Microwave chocolate, sweetened condensed milk, and coffee mixture in a bowl, stirring every 10 seconds, until chocolate is melted, about 1 minute. Stir in vanilla and salt. Let cool.
2. With an electric mixer on medium-high speed, whip cream to soft peaks, about 2 minutes. Whisk one-third of whipped cream into chocolate mixture to lighten it up. Fold remaining whipped cream into chocolate mixture until incorporated. Freeze in airtight container until firm, at least 6 hours. If you make this several days ahead, place a piece of plastic wrap directly on the surface before freezing.
 

Green Ways to Serve Up Good Luck in 2010

Green cooking for New Year's brings good luck in 2010According to Poppy Cannon, food editor for House Beautiful, Ladies' Home Journal and Town and Country in the 1960's, you'll need more than black eyed peas to bring you luck in the New Year. In 1968, she wrote:
 
Way down South, in the old days, they used to say that you would have as many dollars during the year — as black-eyed peas on New Year’s. . . . In Harlem and Chicago’s South Side, they say that ‘Eating peas is just for coins. Collard and other greens bring folding money. And pig, all parts of the pig, will make you healthy, wealthy and sharp.

Following Poppy's advice, we'll need to include black eyed peas, greens and some delicious pork product for our New Year's feast.

For my family, black eyed peas served straight up are just pushed around the plate rather than eaten, so this year I will make hummus, served with toasted pita triangles and as much seasonal fresh produce I can find. Collard greens will substitute for spinach in a smoked ham (leftover from Christmas dinner ... yes, it's still good!) and spinach quiche. If that doesn't bring good luck, I don't know what will. 

Ginger ale for the kids and a glass of champagne for me. Happy New Year!

Black eyed peas turn to hummus, collard greens go into a quiche for New Year'sBlack Eyed Peas Hummus

Ingredients:
 
1/4 cup olive oil
1 medium bulb garlic (containing 10 to 12 cloves)
1/4 cup thinly sliced red onion
1 15-ounce can black-eyed peas, drained and rinsed
2 1/2 ounces jarred pimentos or roasted red bell peppers, drained (about 1/2 cup)
Salt
Freshly ground black pepper

Directions:
 
Preheat the oven to 350 degrees.
 
Drizzle 1 tablespoon of the oil over the garlic bulb and wrap it loosely in a double layer of aluminum foil. Bake for 30 minutes or until bulb is soft. Allow the garlic to cool, then slice 1/4 inch off the root end (bottom) and squeeze the roasted cloves into a blender or the bowl of a food processor.
 
Heat 1 tablespoon of the oil in a medium saute pan over medium heat. Add the onion and cook, stirring once or twice, for a few minutes, until the onion has softened and begun to brown.
 
Transfer the onion to a blender or food processor, then add the drained peas, jarred pimentos or roasted red bell peppers and the remaining 2 tablespoons of oil; puree until smooth. Stop and season with salt and pepper to taste.


HGTV Dream Home 2010: Good Design Meets Great Function

Wolf and Sub-Zero have just posted the rough cut of the HGTV Dream Home 2010 on their Facebook fan page. The home is located in the high desert of New Mexico, an isolated site that sets this classic Pueblo home in high relief against the desert sky. Although we won't find many examples of Pueblo architecture in the midwest or south, lessons from this home may be applied to any contemporary style.

"Modern design has to be complemented by applilances with modern functionality," says spokesperson for Dream Home 2010. For the past five years, Wolf and Sub-Zero appliances have been selected for the HGTV Dream Home, and the tradition continues with this year's choice of appliances.

The Dream House kitchen has more than 60-inches of cooking surface including a gas cooktop, an induction cooktop that uses 50 percent less energy than its gas counterpart, and a steamer for healthy food preparation. In addition to the expected warming drawers, the kitchen has a microwave drawer. Not sure how practical that would be for liquids, but I like the idea of a "hidden" microwave.

The kitchen also has two Sub-Zero refrigerators with under the unit pull-out freezer drawers. Each refrigerator uses less energy than one 100 watt light bulb.

Glass tiles set in aluminum pair well with appliances from Wolf and Sub-ZeroI was struck by the exceptional use of glass tiles set in aluminum in this kitchen, design techniques that could be applied to many kitchen styles. Note the trio of colors: vanilla, aqua and grays. They're easy on the eyes, reflective, and add a welcome splash of color that blends well with the view through the windows. The tiles are used liberally throughout the space, from backsplash to accent wall. I also liked the lower island which provided seating and workspace at the height of standard chairs, rather than stools which would have blocked the view.

Tips from the Obamas for Turning Your Home Green

Last month, First Lady Michelle Obama was spotted shopping at a new farmers market close to the White House, sending a message to Americans that green is the way to go for everyday living. Shop local, eat healthy. She went even further by planting an organic vegetable, fruit and herb garden on the South Lawn whose harvest we hope to see at the nearby market. It will feature 55 varieties of vegetables, hives for honey, herbs, and berries. It's the first vegetable garden at the White House since Eleanor Roosevelt planted a victory garden in WWII. This is just the beginning of the greening of the White House.

According to government officials familiar with greening efforts, the Obama White House intends to be the first White House to earn LEED certification, a system developed by the U.S. Green Building Council (USGBC) to measure and reward buildings and communities that implement green building design, construction, operations, and maintenance.

Because of its historic status, the White House presents challenges not seen in today’s subdivision homes. “LEED certification of the White House is absolutely possible and viable,” said Rick Fedrizzi, CEO and president of USGBC, who will advise the White House on the process. “A normal building is already a challenging assignment, and this is something that’s a historic structure, one of [the] nation’s most historic structures,” he says.

The Obama greening effort will make changes in procurement, energy and water systems, and waste. Staff will consider toxicity and life cycle when making purchases for the facilities. They’ll buy biodegradable cleaners, equipment made with recycled content, and paints and sealers with low volatile organic compounds.

Here are the basic steps the White House Green Team is looking at to qualify for the LEED certification:
•    Installation of computerized energy management systems;
•    Heating, ventilation, and air-conditioning systems that adapt to variable power requirements;
•    Automatic light sensors that shut off lights in unoccupied areas;
•    Low-flow water valves in restrooms;
•    Disposal of equipment like air conditioners that emit ozone-damaging chlorofluorocarbons (CFCs).
•    Because of the external historic glazing on White House windows, replacement is not an option, but consideration of the application of window films to cut ultraviolet rays is underway.
•    Train employees to use recycled content whenever possible.
•    Donate leftover renovation and demolition materials to local reuse organizations.

Increasing Recycling Efforts
Tampa is one of only two cities in the State of Florida that owns a waste-to-energy facility. The city’s McKay Bay Refuse-to-Energy Facility processes more than 300,000 tons of non-recyclable municipal solid waste, which can supply the energy needs of 20,000 homes.

The Yard Waste Recycling Program
is currently being expanded; pickup service will be available citywide, in the next few years. Yard waste is recycled to reduce the amount of waste going into the waste stream.

Tampa's Curbside Recycling Program

Grilling Long After the Leaves Turn

Grill all fall
As summer turns to fall, the opportunity for my favorite green cooking strategy fades. Yes, that means moving the main cooking from the patio back into the kitchen. So take advantage of mild evenings and continue grilling for as long as possible. And if you live in the south, you may be grilling all through the winter, and yes, I envy you.

Fall grilling calls for heartier food than we favored during summer. Think spicy and think meaty even if that means seabass rather than snapper. Try smaller local markets for locally produced choices. And grill as many parts of the meal as possible. Vegetables brushed with a little olive oil are great on the grill, and we’ve shared a grilled dessert idea too. Stretch the grilling season as long as possible, it can last long after the leaves have lost their green.

INGREDIENTS

12 (16-20 count) large shrimp, peeled, de-veined
1 tablespoon vegetable oil
1 teaspoon Cajun Seasoning
8-10 ounces Andouille sausage, cut into 16 (1 inch) slices
1 red pepper, cored, cut into 12 (1 inch) squares
1 green pepper, cored, cut into 12 (1 inch) squares

PREPARATION

Preheat Wolf Barbecue Grill on medium high for 10 minutes with hood closed. Toss shrimp with vegetable oil and Cajun seasoning.
Using 4 metal 9-inch skewers, skewer ingredients in the following order three times to fit on each skewer:
Sausage
Green pepper
Shrimp
Red pepper
Repeat, ending with sausage
Place on grill for 5 to 6 minutes until shrimp is cooked on first side. (Cook with hood closed as much as possible.) Turn skewers over and cook another 3 to 5 minutes until shrimp is thoroughly cooked.
Remove and serve warm immediately.

Makes 4 servings.

NAHB Pre-Call for Green Building Entries

NAHB Green Awards 2010
Each year, NAHB honors excellence in green residential design, construction practices and outstanding green advocacy efforts. Though a formal call for entries has not yet been released, NAHB urges builders and designers to consider their entries. The deadline for 2010 entries is January 15, 2010, which will be upon us sooner than we think. The award gala will be held on May 17, 2010 in Raleigh, North Carolina, an hhgregg state.*

  • Multifamily Remodeling Project of the Year: Hardwick G.C. Inc. of Orlando, Fla., turned an early 20th-century bungalow into a charming duplex that has a rainwater harvesting system, native landscaping and other water-efficient features.
