- 1/2 lb brie cheese, without rind
- 12 pastry tart shells
Cranberry and Orange Relish
- 1 medium orange
- 1 small lemon
- 1/2 tsp ground coriander
- 1 cup cranberries
- 1/2 tsp fresh ginger root, grated
- 1 1/2 tsp maple syrup
Remove the rind from the brie cheese. You can use packaged brie cheese as well.
Bake the pastry tart shells until almost completely baked. Cool tarts.
For the cranberry and orange relish, remove the orange’s zest and peel the orange, cutting down to the flesh to remove all of the white pith. Cut sections from membrane. Remove zest from lemon. Process the orange zest, orange sections, lemon zest, coriander, cranberries and ginger briefly in a food processor. The relish should retain some texture. Stir in the maple syrup. Set aside and cool.
Fill the tart shell with brie and top with cranberry and orange relish. Bake in a 350°F oven for 12 minutes or until cheese bubbles.
